Barbecue Roast - Cauliflower Cheese

A comforting classic with a rich, creamy cheese sauce, perfect as a side for any roast dinner.

Ingredients:

• 500ml milk

• 4 tbsp plain flour

• 50g butter

• 100g strong cheddar, grated

• 1 cauliflower

Method:

1. Partially boil the whole cauliflower in the Cooking Bowl until just tender. Allow to cool, then cut into slices.

2. Place the cauliflower slices on the Large Grill Tray and sear on the Grill for several minutes on each side until lightly charred.

3. Once the cheese sauce is ready, transfer the cauliflower to a Skillet and pour the cheese sauce over.

4. Add a handful of grated cheese to the top and place under the Kadai Lid for roughly 15 minutes.

For the cheese sauce:

1. Pour 500ml milk into the Medium Skillet and add 4 tbsp plain flour and 50g butter.

2. Place over medium heat and whisk continuously as the butter melts and the mixture comes to a boil. The flour will dissolve, and the sauce will begin to thicken.

3. Continue whisking for another 2 minutes as the sauce bubbles, then stir in the grated cheddar cheese until melted and smooth.

Recommended heat: Medium
