A delightful combination of crispy pancetta and tender brussel sprouts, finished with a hint of thyme and a sprinkle of Parmesan.
Ingredients:
• 16 slices pancetta
• 30 brussel sprouts, halved
• 2 tbsp vegetable oil
• Sprig of thyme (for herb brush)
• Parmesan, to serve (optional)
Method:
1. Slice the brussel sprouts in half.
2. Using the pancetta slices, alternate wrapping each brussel sprout half with pancetta as you fill the skewer. Repeat for all skewers.
3. Place the skewers on the skewer rack, baste with butter using the thyme herb brush, and turn every 5 minutes until the pancetta is crispy and the brussel sprouts are cooked through.
4. Optional: Serve with a sprinkle of grated Parmesan.
