Prawn & Cherry Tomato Bruschetta - Serves 2

Preparation time: 5 minutes

Cooking time: 10 minutes

Ingredients

  • Juice of 2 limes
  • Handful of fresh coriander
  • 1 chilli, finely chopped
  • 2 cloves of garlic, crushed 
  • 3 tbsp olive oil 
  • 16 tiger prawns
  • 4 slices of ciabatta
  • 4 cherry tomatoes, halved 
  • balsamic glaze
  • Handful of fresh basil 

Method

  1. In a large bowl mix together the lime juice, coriander, chilli, garlic and olive oil - then add the prawns and leave it for at least 3 hours.
  2. Put the prawns on a hot Grill Tray and cook for 5 minutes. 
  3. Lightly grill the ciabatta slices in another Grill Tray. 
  4. Cover the ciabatta with the cooked prawns.
  5. Garnish with a cherry tomato, basil leaves and a drizzle of balsamic glaze.
