Ingredients
- Juice of 2 limes
- Handful of fresh coriander
- 1 chilli, finely chopped
- 2 cloves of garlic, crushed
- 3 tbsp olive oil
- 16 tiger prawns
- 4 slices of ciabatta
- 4 cherry tomatoes, halved
- balsamic glaze
- Handful of fresh basil
Method
- In a large bowl mix together the lime juice, coriander, chilli, garlic and olive oil - then add the prawns and leave it for at least 3 hours.
- Put the prawns on a hot Grill Tray and cook for 5 minutes.
- Lightly grill the ciabatta slices in another Grill Tray.
- Cover the ciabatta with the cooked prawns.
- Garnish with a cherry tomato, basil leaves and a drizzle of balsamic glaze.
