Shakshuka
Ingredients
- 3 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 chilli
- 1 red pepper - diced or finely sliced
- 1 yellow pepper - diced or finely sliced
- 1 tsp paprika
- Salt and pepper
- 1 ½ tin of plum tomatoes (roughly chopped )
- 4 eggs
- Sprinkle of parsley
Method
- Heat the oil in the Tripod Skillet, add the onion, chilli and garlic and fry until golden.
- Add the peppers. When they are soft add in the tomatoes and spices
- After a few minutes break eggs into four wells, season generously.
- Raise the Tripod Skillet to avoid burning the mixture, simmer for 10 mins using foil to cover the top of the skillet.
- Sprinkle with parsley/ coriander.
