Ingredients
Plum puree
- 600g red plums
- 1 tbsp grated ginger
- 70g sugar
- 1 tbsp lemon juice
Cocktail
- 3 tbsp plum purée
- 5 mint leaves
- 60ml Shropshire Distillery Aromatic Spiced Gin
- Ice
- Tonic water
- Grilled plum slices
- Slice of lemon peel
Method
- Over a hot Kadai, combine the plum, ginger, sugar, and lemon in a skillet
- Cook on medium heat for about 15 minutes, stirring occasionally
- Transfer the contents to a blender and create a puree
- Let the puree cool this will be enough for 6-8 cocktails
- Slice up a plum and place the slices on the grill for a few minutes
- Meanwhile, in a cocktail shaker add the plum purée and mint leaves, then fill with ice
- Pour in the gin
- Shake well to combine the flavours, then pour into a chilled glass
- Top off with tonic water, ice, more mint, and a slice of grilled plum
