Taking inspiration from the traditional Spanish plancha grill, this method of cooking is all about high-temperature searing on a smooth, flat metal searing plate, often with just a touch of oil and smoke. It’s a technique made famous by dishes like gambas a la plancha, pan-seared prawns served sizzling with a drizzle of olive oil, a squeeze of lemon, and a hint of garlic. Simple, fresh, and full of flavour.
