Sweet root vegetables caramelised over smoky embers.
A comforting BBQ roast dinner side dish featuring tender carrots and parsnips glazed in honey and thyme. These roasted vegetables on the BBQ develop a rich, smoky sweetness with crisp edges and soft centres, the perfect complement to any barbecue roast.
Kadai Lid Barbecuing
Method
PREPARE THE VEGETABLES
Peel both the parsnips and carrots and chop evenly. Meanwhile, get the oil hot in a pan over hot coals.
START ROASTING
Place the vegetables in a Medium Skillet and drizzle over the hot oil. Cover with the Kadai Lid and roast for 10 minutes.
ADD FLAVOUR
After 10 minutes, drizzle over the honey or maple syrup and sprinkle in the thyme. Continue roasting for another 15 minutes.
FINISH COOKING
Turn the vegetables using the BBQ Tool and roast for a further 10 minutes, until sticky, tender, and caramelised.
SERVE
Remove from the heat and drizzle with the remaining honey before servin
