Crispy pancetta-wrapped sprouts grilled until golden

A delightful balance of smoky, salty, and savoury flavours, these BBQ sprouts and pancetta skewers are the perfect side for your barbecue roast dinner. Finished with a touch of thyme and a sprinkle of Parmesan, they’re simple, elegant, and irresistibly moreish.

Method

PREPARE THE SPROUTS

Slice the brussel sprouts in half and toss them in vegetable oil with a pinch of salt and pepper.

ASSEMBLE THE SKEWERS

Wrap each brussel sprout half with a slice of pancetta, alternating as you fill each skewer. Repeat until all sprouts are used.

COOK ON THE BBQ

Place the skewers on the Skewer Rack over medium-high heat. Baste with butter using the thyme herb brush, turning every 5 minutes until the pancetta is crisp and the sprouts are tender.

SERVE

Transfer the skewers to a platter and finish with a generous sprinkle of grated Parmesan before serving.
