Gooey Baked Camenbert, Dirty Style

This baked camembert is one of the simplest and most rewarding things to cook over fire. Set directly into the embers, the cheese softens inside its rind and takes on the rich aroma of smoking charcoal. Served with torn bread, crisp carrots, cornichons and warm potatoes, it makes a generous ember camembert for easy outdoor sharing. Whether you call it ember camembert or BBQ camembert, the pleasure is in its simplicity — good cheese, open fire, and something to dip.

Method

PREP THE CAMEMBERT

Remove the paper from the cheese, then place the camembert back into its wooden box.

BAKE IN THE EMBERS

Using the Tongs, place the box onto the embers and rest a couple of pieces of lit charcoal on the lid.

COOK UNTIL GOOEY

Leave to cook for approximately 5 minutes, until the baked camembert has become liquid inside its rind. Keep an eye on the box so it does not over-char or catch fire.

REMOVE AND REST

Carefully lift the box out of the fire onto a heat-proof serving plate using the Tongs. Leave it for a few minutes to cool slightly.

SERVE

Take the lid off the box and serve the ember camembert with bread, carrots, cornichons and potatoes for dipping.
