Step One: Give it a Clean Start
Before curing, make sure your cookware is properly cleaned. Wash it in warm, soapy water to remove any residue or old grease. Avoid using abrasive scourers, which can damage the surface, a soft sponge will do the job just fine.
Step Two: Dry it Off & Warm it Up
Once clean, hand-dry thoroughly and place your cookware on the hob or Kadai to heat gently until it’s completely dry. This step helps remove any lingering moisture, which is vital for seasoning Kadai cookware effectively.
Step Three: Add a Touch of Oil
Drizzle a small amount of oil into your pan, rapeseed or vegetable oil works best, thanks to their high smoking points. You don’t need much; a little goes a long way.
Step Four: Coat & Cover
Using a clean cloth or paper towel, carefully spread the oil across the entire surface of the cookware, inside and out. Be sure it’s coated evenly and thinly. Take care, your pan will still be warm, so use heat-resistant gloves if needed.
Step Five: Into the Oven
Once coated, place the pan in a preheated oven at 230°C for 20–30 minutes. This process bonds the oil to the metal, creating a hard-wearing, naturally non-stick layer.
Ongoing Care: Keep It Warm, Keep It Dry
After each use, give your cookware a rinse, dry it thoroughly, give it a light coat of oil, and place it back on your warm Kadai to let the residual heat keep it dry. Store it in a dry place to protect against rust. With each use and occasional re-curing, the surface will improve, developing its own seasoned patina.
