This Spiced Plum & Ginger Gin Fizz combines rich, caramelised plums with a hint of ginger for a beautifully balanced cocktail with depth and warmth. Finished with tonic water and a slice of grilled plum, it’s a refined seasonal drink that captures the spirit of autumn evenings around the fire.

MAKE THE PLUM PURÉE
Light your Kadai and place a Skillet over a medium heat. Add the plums, grated ginger, sugar, and lemon juice. Cook for 15 minutes, stirring occasionally until softened.
BLEND THE MIXTURE
Transfer the mixture to a blender and blend into a smooth purée. Set aside to cool completely, this recipe will make enough for 6–8 Spiced Plum & Ginger Gin Fizz cocktails.
GRILL THE PLUM SLICES
Slice a fresh plum and grill the slices for a few minutes on each side until lightly charred. Set aside for garnish.
SHAKE AND SERVE
In a cocktail shaker, combine the plum purée and mint leaves, then fill with ice. Pour in the gin and shake well to combine the flavours. Strain into a chilled glass and top with tonic water. Add more ice, mint leaves, a grilled plum slice, and a twist of lemon peel to finish.
